At La Mujer de Verde they have been able to design an establishment that exudes good taste.

Peti Collage's first exhibition in Palma takes place in a restaurant we have heard about: La Mujer de Verde. We walk through the streets of Puig de Sant Pere, an emblematic neighborhood that in medieval times was a fishing village, and which occupies an important place in the heart of any llonguet. On the way to our appointment, we cross one of the bridges that fords Sa Riera and we look at the imposing wall governed by Es Baluard, in its views of a port where the lights sparkle. And almost next to the wall that surrounds the old part of the city, in the Plaza Porta de Santa Catalina, we find the front door of a place that has come to stay.

As soon as we cross the threshold, we sense that the evening will be special. The lighting in La Mujer de Verde is pleasant and dim. It comes from a whitewashed stone wall divided into two tones: a minimalist white and a green that plunges us into the idiosyncrasy of the establishment. The work of Peti Collage hangs on the walls and we decide to have a drink. Carlos serves us with a frank smile, arranges a couple of beers bearing the name of the restaurant on our table.

The first sip is refreshing, with the fruity touch of an IPA with character, fermented in an artisanal way at the Juntos brewery in Bunyola. It will fit like a glove to a dinner we hadn't planned, to which we are almost forced to have, inmediately after reading the menu. The citric aroma of the IPA will spice up the recipes that Juanjo Ramírez, from the stove, elaborates with enormous mastery. Juanjo captained with an expert hand the kitchen of Bon Lloc for forty-two years, the restaurant that can boast of being the first vegetarian restaurant opened in Mallorca. His credentials speak for themselves. 

Ramírez's expertise caresses all the senses, and the first to be affected by his charm is sight. Beet ravioli with cashew nut cheese lands on our table. The beauty of the dish is of a delicacy that is hard to believe, a proposal sprinkled with colorful petals that invites us to observe, to admire its attributes before tasting them.

After a moment of rapture, the beet slices yield gently under the pressure of the knife. We bring the fork to our mouths. Our taste buds are suddenly activated. The sponginess of the cheese mingles with the rawness of the beet. They are paired naturally, as if they have known each other forever. While savoring this surprising fusion, we discover almost unintentionally an element that was not in our plans. The sunflower seed pesto bursts onto the scene and asks for prominence, camouflaged under the cheese, surrounded by a caramelized quinoa that rounds off a work that is almost a miracle.  

The second course consists of tacos of jackfruit mechado with pico de gallo and jalapeños. A trip to Mexico with a vegetarian identity and spicy pinches. Each bite is a hymn to the reinterpretation of the cuisine, a crunchy version where the freshness of the vegetable and the pleasant sting of the jalapeño combine perfectly. A playful spiciness that gets relieved thanks to the touches of a cilantro that goes on its own. It lingers on our tongue because it does not want us to forget its character. While we taste the mixture of ingredients, our eyes wander around the other tables: the diners chat animatedly under the intimacy provided by the indirect light. La Mujer de Verde has been able to design an establishment that exudes good taste. The experience of its team - its members are family - is evident in its menu, in the decoration, and in the warmth of the service. We are looking forward to trying their menu. That is why we will be back.
