Ancestral cold meats with avant-garde recipes

Can Company has been dedicated body and soul to the agri-food sector for over 60 years. Their specialty is Porc Negre meat, the island's pork breed par excellence, which they use to make succulent cold meats that pay homage to our gastronomic roots with a creative, avant-garde touch.

Although Can Company began its journey in 1960 through the production and distribution of its own cereals and flours, the brand -as we know it now- was born in 2015. It was in that year when master charcuterie maker Xesc Reina joined the company and, together with the third generation, Can Company decided to rethink and innovate -from the ground up- a product as deeply rooted in Mallorca and our gastronomic identity as sobrasada.

Since then, in their factory located in Inca, in the heart of the island, Can Company has not stopped working on new proposals, always with common sense, a lot of intuition, the good work of Reina and, of course, a dose of creativity. The objective? to demonstrate that gastronomic craftsmanship is not incompatible with culinary innovation. 

"The better the animal, the better quality food you will eat. This is what we do and will continue to do because it's who we are".

The starting point, however, is always the same: the free-range rearing of their own black pigs, the island's native breed, which Can Company feeds with their own cereal feed. In fact, it is a member of the family itself - Pere Antoni - who, from the Agronatura factory in Maria de la Salut, designs the specific and ideal combination to feed their animals. "The better the animal, the better quality food you will eat. This is what we do and will continue to do because it is what we are," they tell us with conviction.

The result of their work is a diverse and somewhat eclectic line of cold meats that will make any lover of good food salivate. On the one hand, of course, they make the indispensable classic sobrasadas. One is mixed with white and black pork, and the other is made exclusively with Porc Negre meat, pepper and their own "tap de cortí", which gives the sobrasada its characteristic reddish appearance. The latter, by the way, has recently been awarded as the best cured sausage in Europe.

In this journey towards our culinary identity, Can Company has recovered cold meats from the 17th century whose recipes have been researched by Reina himself and the historian Toni Contreras, and have adapted them "to the palate of the 21st century", they tell us. This is the case of Nora, an ancestral cold cut with pork, nuts and sweet spices, and the tasty Figatella, an explosion of spices from the island.

"We are not a big industry that distributes tons of sobrassada and although we think and make with a vision towards the future, we live day by day".

Finally, and to complete this surprising portfolio of products, the most innovative bet is made up of Reina's avant-garde creations, sobrasadas that explore surprising flavors without losing sight of tradition and play at combining -and how well they do it- with Mahon cheese, blue cheese or curry.

Behind this know-how that always seeks excellence, a concept guides the Can Company team: char cuisine, a philosophy that focuses on the quality and flavor of Mediterranean cold meats through avant-garde cuisine and is committed to turning food into a ritual of enjoyment and pleasure that awakens the senses and stirs emotions.

To make this happen, this family company studies the whole process -from the cereals that feed the pigs to the final packaging- in a very Mediterranean practice: better a little and well done than a lot and badly. "We are not a big enterprise that distributes tons of sobrassada", the third generation tells us with great sincerity today in their factory in Inca, "and although we think and do with a vision set on the future, we live day by day".

In Can Company we breathe love and a deep respect for our cultural and gastronomic roots and, at the same time, we live with a receptive attitude towards changes and new possibilities. A way of being and being in the world that seems to be inherited, generation after generation, in the family, and transmitted to the rest of us through their exquisite products that succeed in the Iberian Peninsula, Italy, Germany and even Hong Kong.
